I would call it a work of performance art rather than a research project. He's just trying to get people to look at things from a different frame.

The article describes the chef as conducting a sociology experiment. The chef hired a student to create an exit interview form. The problem with the experiment is in the way it was set up.

Not having read any details, I'd guess there was no "problem" - he just showed displayed what he intended.
It's just an exercise. Everyone's so serious and fine-lined these days. Bring back fat and sloppy.
