This is really a special occasion cake. A friend moved to the west coast to be with her daughter and she gave me everything left in her pantry. She loved pineapple and had quite a few cans of all sizes and kinds. The rest I bought as mark downs for final sale or as a lost leader. The can of whipped cream was the real treat. I actually made this last month when it was still really hot out and posted on my food blog. It has been one of the most popular recipe that I have posted.

Richard...take a small can of crushed pineapple with the juice drained and add it to a 8 oz. package of low fat cream cheese. Cut yourself up some celery sticks and use the cream cheese and pineapple as a dip. It also tastes really really good on a toasted bagel.
