Apple fritters
Ingredients
Vegetable oil, for deep-frying
2 cups all-purpose flour
1/2 cup plus 3 tablespoons granulated sugar
2 1/4 teaspoons baking powder
1 teaspoons ground cinnamon
1 1/4 teaspoons salt
2 large eggs
3/4 cup whole milk
2 tablespoons melted butter
2 teaspoons vanilla extract
2 apples, cored,peeled and cut into small dice
Powdered sugar, for dusting
Directions
Heat a couple of inches of vegetable oil in a large electric skillet at 350 degrees.
In a bowl, sift flour, granulated sugar, baking powder, cinnamon and salt together. In a separate mixing bowl, beat the eggs with a mixer and then add the milk, melted butter and vanilla. Gently fold the dry and wet ingredients together until just combined (do not over-mix). Fold in the chopped apples by hand, to make a very chunky batter.
Drop heaping spoons full of batter into the hot oil, 6 to 8 at a time.You don't want to fill the skillet up because you will need to flip the fritters over.
Fry until golden brown on one side then turn over.
Remove and drain on paper towels. Sprinkle or roll in powered sugar. Then serve warm.
This is a wonderful fall treat and very easy to make. I get about 24 fritters from the batter. They usually disappear in a few hours.
You can make this with Splenda sugar substitute and leave off the powered sugar.

I recall the powdered sugar. Not many calories in that.
But your grandkids need the calories, for sure!

Let me know if you try them. They freeze nice and you can reheat them in the microwave. If you make pan cakes you can make these. The batter is almost the same but with apples and you fry them a couple of inches of oil. Flip them once with a fork.

Using beer would put a whole new spin on bobbing for apples! But sober fritters fry better (as does the cook).

The beer makes them puff more. It works the same as beer batter bread. Beer and ale was used as leavening before there was good baking powder, Brewers yeast does the job.

I just watched her video. If you are not running a kosher kitchen, milk is better because it makes a nice cake like donut. That is what my family likes. Also my batter is thicker too. I have always made them like I do since I was little.
