The line about "minimum wage made things worse" stuck out, but in general, it's an industry where everything's gone to hell. Yes, once upon a time if you were globetrotting, you could get a wait job & pocket decent tips first night. Now it's a grind-down job like any other. Overtime? Forget it. Pooled tips? So what's the point - just charge higher prices and save the effort. But won't happen - the typical restaurant worker has 0 leverage. Takes the fun out of eating out. "You never stopped to see the faces on the clowns as they did their tricks for you...." Yep, tricks - a different kind of whoring at times.
